Ingredients: 1 tbsp oil. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 cup broccoli florets. 1 cup snap peas. 1 cup shredded carrots. 1/2 cup cashews. 1 can 14 oz coconut milk. 3 tbsp red curry paste. 2 tbsp soy sauce. 1 tbsp maple syrup. 1 tbsp lime juice. Salt and pepper to taste. Cooked rice, for serving. Fresh cilantro, for garnish.
Instructions: In a large skillet or wok, heat oil over medium-high heat. Add onion and garlic, saut until fragrant, about 2 minutes. Add bell peppers, broccoli, snap peas, and carrots. Cook for 5-7 minutes, until vegetables are tender-crisp. Stir in cashews. In a small bowl, whisk together coconut milk, red curry paste, soy sauce, maple syrup, lime juice, salt, and pepper. Pour sauce over vegetables and cashews in the skillet. Stir to combine. Simmer for 5-7 minutes, until sauce thickens slightly. Serve over cooked rice, garnished with fresh cilantro.
