These vegan wagon wheels are a delightful treat with a gooey marshmallow and chia jam filling, sandwiched between cocoa-infused cookies and dipped in rich chocolate.
Ingredients: 1 cup all-purpose flour. 1/2 cup vegan butter, softened. 1/4 cup powdered sugar. 2 tablespoons cocoa powder. 1/4 teaspoon salt. 1/2 cup vegan chocolate chips. 1/2 cup vegan marshmallows. 1/4 cup raspberry chia jam.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together vegan butter and powdered sugar until smooth. Add flour, cocoa powder, and salt to the bowl. Mix until a dough forms. Divide the dough into equal-sized balls and flatten them into discs on the prepared baking sheet. Bake for 10-12 minutes until the edges are firm. Let them cool completely. Spread a layer of raspberry chia jam on half of the cookies. Top the jam with vegan marshmallows and press gently. Place the remaining cookies on top to form sandwiches. Melt vegan chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each sandwich halfway into the melted chocolate and place back on the baking sheet. Allow the chocolate to set before serving.
