Green Ginger Fruit Smoothie
Ingredients:
1 big handful of bok choy, rinse well and chop root ends off (you can also use some romaine lettuce)
1 apple, quartered , cored and seeded
juice of 1 orange
1 banana
1 big knob of ginger, at least an inch in diameter
2 tbsps of VCO (virgin coconut oil) - this helps make it creamy apart from the banana
2 tbsps of probiotics (Carica brand is vegan - good for lactose intolerants)
honey to taste, I use the dark raw kind
water & ice
optional: fresh coconut meat will make this really really thick so careful how much you add in.
Procedure:
Blend the chunky ones together first: apple, ginger with banana and orange juice with a bit of water. Then add the bok choy with water then the rest and ice.
Perfect healthy breakfast food! Quite filling too!
If you drink this on a daily basis, it can get boring. Sometimes I swap out of the ingredients out. There are so many variations you can do of this.
Papayas and avocados make a really creamy smoothie. You can also freeze the papaya or avocados before usage so that you don't have to use any ice.
In t he Philippines, it can get incredibly hot in the summer time and the fruits I have in the kitchen tend to get overripe quite fast. Especially bananas and papayas...so I freeze them so I can extend their usage date. This is really handy in saving the dosh you spent on groceries plus overripe fruits are great in shakes. :)
