A quick and hearty chili loaded with ground beef, beans, veggies, and bold spices, cooked in the Instant Pot for an ultra-fast and delicious meal. Perfect for those busy days when you crave a garden-fresh, comforting bowl of chili.
Ingredients: 1 lb ground beef. 1 onion, diced. 3 cloves garlic, minced. 1 bell pepper, diced. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup frozen corn. 2 cups beef broth. 2 tablespoons chili powder. 1 tablespoon cumin. 1 teaspoon paprika. 1 teaspoon oregano. Salt and pepper to taste. 1 cup shredded cheddar cheese for garnish. 1/2 cup sour cream for garnish. Fresh cilantro for garnish.
Instructions: Put the Instant Pot in saut mode and brown the ground beef. Put in the garlic and diced onions, and saut until the onions are soft. Add kidney beans, black beans, diced tomatoes, frozen corn, and bell pepper. Add chili powder, cumin, paprika, oregano, salt, and pepper after adding the beef broth. Put the Instant Pot lid on tight, turn it on manual, and cook for 10 minutes on high pressure. Let the pressure drop naturally for 5 minutes, and then carefully let go of the rest of the pressure quickly.
