Ingredients: 1 cup diced cucumber. 1 cup diced tomatoes. 1 cup diced bell peppers. 1 cup diced carrots. 1 cup diced celery. 1 cup diced red onion. 2 cups Summer Fresh V6 Vegetable Juice. Salt and pepper to taste. Fresh herbs for garnish optional.
Instructions: In a large bowl, combine diced cucumber, tomatoes, bell peppers, carrots, celery, and red onion. Pour Summer Fresh V6 Vegetable Juice over the vegetables. Season with salt and pepper to taste. Toss gently to combine. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with fresh herbs if desired before serving.
