This vegetable pasta with spicy chickpeas is a hearty and tasty meal that is quick and easy to make. It's great for a weeknight dinner or meal prep because it's full of protein-rich chickpeas and bright vegetables.
Ingredients: 1 can chickpeas, drained and rinsed. 2 cups cooked pasta of choice. 1 cup cherry tomatoes, halved. 1 cup chopped bell peppers any color. 1/2 cup chopped red onion. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 teaspoon dried oregano. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Chop the red onion and add it to the pan. Saut until the garlic smells good. Add the bell peppers, cherry tomatoes, and chickpeas and mix them in. Add red pepper flakes, dried oregano, salt, and pepper to taste. After cooking for 5 to 7 minutes, the vegetables should be soft. Toss the cooked pasta in the pan until it is well mixed and hot all the way through. Before serving, sprinkle with fresh parsley.
