what are we eating this week? i’m gonna keep it simple with lots of veggie burgers and then some english muffin pizzas with roasted broccoli. and then i might use some of the broccoli to make some kind of lemony orzo...something?? lemon ginger orzo with roasted broccoli?? i just made that up right now lol maybe that will be a thing?
A Confession
Maybe (hopefully) nobody cares, but I’m vegetarian, sometimes pescetarian, in Myanmar right now. This isn’t a long term thing, as I intend to jump right back into full veganism once i reach U.S. soil again.
The issue I am having is that Burmese food is by and large rice or noodles sprinkled with meat (which i have finally learned to order without the meat), and then different kinds of fried meat dishes. A lot of times, egg* or condensed milk is my only option for protein while eating out--even tofu is pretty uncommon and I haven’t seen lentils at restaurants.
Hopefully y’all don’t feel betrayed that I still talk about vegan shit and animal rights All the Time even though i eat an egg every couple days
*I realize ethically egg is worse than meat from a large animal, but I still have a much bigger disgust reaction to pork or beef than to egg, basically an insurmountable disgust reaction.
Life update, I got hospitalized but got better meds out of it and I'm having less depression, anxiety, and hallucinations. Almost no paranoia too. I'm cautiously hopeful about it.
Cons, I'm still existentially wrestling with buddhism vs hinduism. I learn so much wisdom from both. I have more profound experiences with hinduism and I love Ganesha, Shiva, and Ma Durga. But it's also overwhelming to try to learn more without a temple or teacher. There's a lot more accessibility in buddhism and plenty of centers and temples around. I just really struggle with the concept of atman vs anatta, Self or no-Self. I've heard teachings on both but I don't know which one I believe.
Also still struggling with vegetarianism. I'm eating about 80% veg, only occasional chicken or fish. But I'm completely turned off of beef and pork. My goal is to eat fully veg but it's going to take time to work through my issues with meat.
Dairy free for 2 days now and actually ate vegan for those days too. I really don't eat eggs that often. I'm feeling hopeful about my food choices.
Also part of tapering my meds means I no longer feel insanely tired and groggy to the point I'm falling asleep at work. It's wonderful to feel alert again. Lowkey fuck geodon lol.
beyond meat or any plant based meat you like, however much you like (usually I do 2 packets and mix types)
packet of water crackers, crushed, or if not then flour will do
couple tablespoons malt vinegar
couple tablespoons soy sauce
mustard, turmeric, whatever spices and herbs you like
onion, finely diced, and/or finely grated carrot or beetroot for juiciness, optional
mix it all together in a bowl and then roll into balls
bake on oiled tray at 180 for 30 minutes give it take til slightly brown

I made lentil taco filling and it's delicious!! I was scared of dry lentils for so long for literally no reason!
