Ingredients: 2 cups grated zucchini. 1 cup all-purpose flour. 1/2 cup cocoa powder. 1 cup granulated sugar. 1/2 cup unsweetened applesauce. 1/4 cup almond milk. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 tsp baking soda. 1/2 tsp salt. 1/2 cup vegan chocolate chips.
Instructions: Warm the oven up to 175F 350C. Prepare a 9x13-inch baking dish by greasing it. Grate the zucchini and mix it with the applesauce, almond milk, coconut oil, and vanilla extract in a large bowl. Mix the cocoa powder, sugar, baking soda, and salt with a whisk in a different bowl. Slowly add the dry ingredients to the zucchini mixture and mix them in until everything is well mixed. Add the chocolate chips and mix them in. Spread out the batter in the pan that has been prepared. Put it in the oven and bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. Let it cool down before cutting it into squares.
