vegan dorayaki recipe
お茶とどら焼き!
Dorayaki, sometimes referred to as Mikasa, is a Japanese dessert made up of a red bean paste (anko) filling sandwiched between to thick pancakes. However in this recipe, I will be using a chocolate custard filling! The recipe should give you eight pancakes, or 4 dorayaki when put together.
INDGREDIENTS
Pancakes:
170g flour
2 tbsp powdered/icing sugar
2 tsp baking powder OR ¼ tsp of bicarbonate of soda
80ml soy milk
2 tbsp maple syrup
oil for the pan
Filling:
110ml soy milk
1 tsp vanilla extract
2 tbs cocoa powder
25g caster sugar
10g flour
1/2 teaspoon of baking powder
METHOD
Weigh out and sift the flour, powdered sugar, and baking powder into a mixing bowl.
Add the soy milk and maple syrup into another large-sized bowl.
Pour the dry ingredients into the wet, and stir to make a smooth batter. It should be thin enough to pour but not too thick. Let the batter sit under a tea towell for 10-15 minutes.
As the batter sits you can start the custard. Pour the soy milk and vanilla extract into a pan and bring to boil, but be careful not to burn it. Once boiled, remove the pan from heat and set aside.
In a bowl, combine the sugar with the sifted flour and cocoa powder. Slowly pour the hot soy milk into the bowl while whisking it all together.
Pour the mixture back into the pan and bring to boil on a medium heat, while whisking constantly for about 1 minute or until thick.
Remove the custard from heat and transfer into a bowl. Cover with greaseproof paper or sprinkle some icing sugar over the top to prevent a skin from forming. Set aside to cool.
Back to the pancakes, add a small amount of oil to a non-stick frying pan and spread evenly. Warm it on a medium-high heat.
Reduce the heat to low and pour 2 tbsp of the batter into the non-stick pan in a round shape. You’ll want them to all be roughly the same size and shape for your dorayaki.
Cook on the first side for about 1-2 minutes, but be careful as they are easy to burn. Flip and cook on the other side for around another minute before removing.
Transfer your pancakes to a cooling rack or plate and allow them to cool. Once cooled, pair your pancakes up based on size and spoon some of the chocolate custard on them. Sandwich the pancakes together, and refridgerate your dorayaki.
Serve with a sprinkle of icing sugar.
