The top two photos are two of the recipes I made over the weekend. They both came from my CSA newsletter and used the veggies we got last week (every Wednesday we pick up a box of fresh produce that we paid for at the beginning of summer. I love all the variety of vegetables this has made us eat!!). For the next time I make the corn muffins, I need to steam the kale longer and cut it up into smaller pieces. When I baked them this time, you got huge chunks of kale in a bite and it wasn’t very pleasant. They still tasted great! But sometimes you were left chewing a big bite of kale. The breakfast burritos were interesting because they soak overnight like a casserole, but a really nice make ahead for brunch! I added jalapeños and tomatoes and green pepper. I only used Swiss Chard because we got it in our CSA box. In the future I would probably use spinach because I like that texture and flavor better with eggs. I also made couple other corn recipes, including the super tasty corn dip! And made some zucchini tots to go with the breakfast burritos!
