COMPOTE Had some stone fruit that was about two days from going. Decided I would throw together a fruit compote. Traditionally a compote is pieces of fruit cooked down in its own juices with an assortment of spices. Traditionally, compotes are much thinner than jam or jelly. For me, they live somewhere between a relish and a sauce. The great thing about a compote is how simple it is to make. A little bit of prep time and you're good to go. I think I took, Maybe 30-45 min prep to finish. To the stone fruit I added some apple, cardamom, brown sugar, white sugar, honey, nutmeg, ground ginger, and cinnamon. It smells absolutely amazing! Juice of an orange and a hit of lemon juice helped round out the overall flavor. This is like the world's best peach and apple pie, but without the crust!
