Last night’s Campari guest shift at Marini’s on 57 was a real Symphony in Red, in almost senses of the word. Symphony Loo, regional brand ambassador for Campari, was on hand to shake and stir up some great drinks in conjunction with Marini’s On 57’s 10th Anniversary Party. She was kind enough to indulge us with an off-menu Negroni Sbagliato (with Prosecco in it, of course) to begin with, and the drinks on the guest shift menu were also pretty good. My favourite of the night had to be the Espadin's Amber, made with Montelobos Espadin Mezcal, Frangelico, Lychee Liqueur, Citric Solution, Honey, and a top up of Butterfly Pea Tea. It sounds like it has a lot going on, but was actually a perfectly balanced, clean and crisp drink that doesn’t take the spotlight off the Mezcal at all. She also introduced us to a new way to drink Campari - the Campari Shakerato, which is basically Campari wet shaken first then dry shaken to get extra fluffiness, and served as shots.
