Salt and pepper to taste. 2 cups shredded cabbage. 1 cup shredded carrots. 1/4 cup chopped fresh mint. 1/4 cup sliced Kalamata olives. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste. Cooking spray or oil for waffle iron.
