This Walnut-Kale Vegan Pesto Dip is a colorful and tasty alternative to regular pesto dips. Ingredients: 2 cups kale leaves, stemmed. 1 cup walnuts. 3 cloves garlic. 1/4 cup nutritional yeast. 1/4 cup olive oil. 2 tablespoons lemon juice. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup water optional, for desired consistency. Instructions: Put kale, walnuts, garlic, and nutritional yeast in a food processor and pulse them together. Pulse until the food is very small. Slowly add the olive oil and lemon juice while the processor is running until the mixture is smooth. Add salt and pepper, and then blend until everything is well mixed. If the pesto is too thick, slowly add water until it reaches the right consistency.
