A warm and tasty soup made with roasted tomatoes, garlic, and onions that has been mixed with spices and cooked until it's just right.
Ingredients: 2 lbs tomatoes, halved. 4 cloves garlic. 2 tablespoons olive oil. 1 onion, chopped. 4 cups vegetable broth. 1 teaspoon sugar. 1/2 teaspoon paprika. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Spread garlic cloves and tomato halves out on a baking sheet. Add salt and pepper, then drizzle with olive oil. Roast for 25 to 30 minutes, or until tomatoes are soft and slightly charred. Put olive oil in a big pot and heat it over medium-low heat. Add the chopped onion and cook for about 5 minutes, until the onion turns clear. Cook the garlic and tomatoes and add them to the pot. Add the sugar, paprika, and vegetable broth and mix well. Bring it to a low boil, then cook for 15 to 20 minutes. Blend the soup until it's smooth with an immersion blender. You could also carefully add the soup to a blender in small amounts and blend until smooth. Add pepper and salt to taste. Add fresh basil leaves on top and serve hot. Have fun!
