These tasty and nutritious Paleo Apple Cinnamon Muffins are ideal for breakfast or as a snack. They are grain-free and gluten-free, made with almond and coconut flour, sweetened with honey, and filled with warm cinnamon and fresh apples.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 teaspoon cinnamon. 3 large eggs. 1/4 cup honey. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 2 medium apples, peeled, cored, and diced. 1/4 cup chopped walnuts optional. 1/4 cup raisins optional.
Instructions: Set the oven temperature to 175C 350F. Use paper liners to line a muffin tin. Almond flour, coconut flour, baking soda, salt, and cinnamon should all be combined in a big bowl. Whisk eggs, honey, melted coconut oil, and vanilla extract in a separate bowl. After adding the wet ingredients to the dry ingredients, thoroughly mix them together. Stir in the chopped walnuts, raisins, and diced apples, if using. Pour the batter into each muffin tin that has been prepared, filling it to about 3/4 of the way. A toothpick inserted into the center of a muffin should come out clean after 20 to 25 minutes of baking in a preheated oven. After letting the muffins cool in the pan for a few minutes, move them to a wire rack to finish cooling. Savor your Apple Cinnamon Paleo Muffins!
