Ingredients: 1 cup cooked chicken, shredded. 1/2 cup rice, uncooked. 4 cups chicken broth. 1 carrot, diced. 1 celery stalk, chopped. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1/4 cup lemon juice. 1 teaspoon lemon zest. 1 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil. 2 tablespoons fresh parsley, chopped for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the celery, carrot, onion, and garlic. Cook the vegetables in oil until they are soft. Add the uncooked rice, chicken broth, lemon juice, lemon zest, and dried thyme, and mix them all together. Add pepper and salt to taste. Once the soup starts to boil, lower the heat and let it cook slowly. Place a lid on top and cook for 15 to 20 minutes, or until the rice is soft. Serve hot with fresh parsley on top.
