Watermelon kimchi!!
HEB was having a crazy sale on a bunch of fruits, so naturally I snatched them up lol.
I love watermelon but I hate how much waste can come from one small watermelon.
Then I remembered seeing people making watermelon kimchi!!! I love kimchi.
I only used half the rind for this, as it is an experimental recipe at the moment; I've only ever made napa cabbage kimchi before, I'm not sure I'll like this.
But it looks and sounds super good so I had to try.
I added green onions and carrots, and used the rind juice with the watermelon juice to make a paste with toasted rice flour.
I also added a splash of soy, fish sauce, and honey for good measure 😁
I'm going to let it ferment for a few hours before I pop it in the fridge. I am so excited about it though!
Plus now I have a bunch of fresh cut watermelon!
The watermelon was so juicy it cracked open when I attempted to slice it! 😱
