This Watermelon and Haloumi Salad has just the right amount of sweet and savory. The juicy watermelon goes well with the grilled haloumi cheese, and the mint leaves give it a nice, fresh taste. Ingredients: 200g watermelon, cubed. 150g haloumi cheese, sliced. 2 cups arugula rocket leaves. 1/4 cup fresh mint leaves. 1/4 cup red onion, thinly sliced. 2 tbsp extra virgin olive oil. 1 tbsp balsamic vinegar. Salt and pepper to taste.
Instructions: Get a grill pan or barbecue hot. Grill the haloumi slices for two to three minutes on each side, or until grill marks show up and the cheese starts to melt a bit. Watermelon cubes, arugula, mint leaves, and thinly sliced red onion should all be put in a large salad bowl. Add the extra virgin olive oil and balsamic vinegar to the salad and mix them together. Add pepper and salt to taste. To make sure all the ingredients are mixed well, gently toss the salad. On top of the salad, put the grilled haloumi slices. Serve right away as a tasty and refreshing summer salad.
