Ingredients: 1 pizza dough. 2 tbsp olive oil. 1 cup shredded mozzarella cheese. 1/2 cup crumbled feta cheese. 1 cup heirloom carrots, thinly sliced. 1/4 cup red onion, thinly sliced. 2 cloves garlic, minced. 1/4 cup fresh arugula. Salt and pepper to taste.
Instructions: Start by heating the oven up to 450F 230C. On a floured surface, roll out the pizza dough into the shape you want. Put the dough on a pizza stone or baking sheet. Spread olive oil on the dough. Cover the dough with mozzarella cheese all over. Add minced garlic, sliced heirloom carrots, and red onion on top. Put crumbled feta cheese on top of the vegetables. Add pepper and salt to taste. It should be baked in a hot oven for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly. Take it out of the oven and let it cool for one minute. Put some fresh arugula on top and serve it hot. Have fun with your heirloom carrot and feta pizza!
