What to do with leftover coconut red cabbage slaw? Why, make a pretty soup, of course! Grabbed some granny smith apples from the bagel shop and made this yummy fall soup :) Cinnamon, ginger, and nutmeg give this soup a wonderful fall aroma. Garnished with more apples, goat yogurt, and some weirdly named cheese from the under $5 basket at Scotts Valley Market. Fall is almost here! I'm going to go drink some cider now.
