I have very strong bread opinions which include that the dry, leathery sort of sangak that seemed popular in tehran is awful but softer, doughier sangak is peak. taaftun is perhaps the best all rounder and keeps the most nicely long-term, just enough thickness to retain moisture. barbari has the steepest freshness gradient where fresh barbari with cheese and honey is divine but if you let it stale even a bit you're eating cardboard. lavaash is silky smooth except after a few days it warms up to a dry crunch which has its own appeal. the biscuit-dry noon qandi is absolutely heaven with tea—they make thicker, softer ones at the persian store here and it's still quite nice with tea but you need the bone dry strips of it for the best experience.
