#FoodChoreographer I don't teach my chefs how to cook, nope, I teach my chefs how to dance. Because if you can't dance you can't cook behind a line. I show them the method in moves, first you put this by a quick pivot to the right, then you switch off the right foot as you tilt the pan and add this. Then I let them do it and fine tune them. This is how I have created chefs out of my cooks. You are not a great chef unless you can teach your cooks to dance because they will never be able to put your food out fast and accurately if they cannot do it rhythmically. And without speed a chef is nothing but a home cook, because if you can't make it fast you can't even put it on a restaurants menu.. Here I am showing one of my best chefs Ricky from @FrankRestaurant the moves to make 30 #crispyeggs at the same time for #WhitetruffleDinner2015 at #chezFrank last night. I won't ever have to show Ricky this again, he's that good, if you don't believe me sit at the kitchen table at #FrankRestaurant when he's working and enjoy the show.
