Killer Navy Bean Soup
This is a killer navy bean soup from the boil to simmer of the beans and seasonings sending out heavenly food scents through adding the vegetables as finishing touch ladling it up into deep soup bowls for the entire family. There’s a lot going on there but this is easy so you can take your ease once this is on the stove, crock pot, or slow cooker...see what I mean!
3 c. dry navy beans
5 c. water
4 c. vegetable broth
2 t. smokey paprika
2 lg. onions, diced
2 c. celery, diced
2 carrots, sliced thin
1 bay leaf
1 t. salt
1 t. pepper
1/2 t. ground cloves
2 - 14.5 oz. cans diced tomatoes with liquid
In a large soup pot, add beans, water and vegetable broth. Bring to a boil, then turn to simmer. Add paprika, onions, celery, carrots, bay leaf, salt, pepper, and ground cloves. Simmer until the beans are tender - 1 1/2 - 2 hours. Pour in tomatoes, gently stir in and allow to warm with the rest of the soup. Ladle up and enjoy!
