Also, I imagine Jervis just revealing Mother Gooseberry as his crush to any other villain, and they would take one look at her (whether she’s in the distance or it’s a picture of her) and they just look at him dead in the face and go “You’re in love with THAT?!”

How Mad Hatter and Mother Gooseberry could have met:
In BTAS, they would have met in Arkham, a slow burn forming from how she sings, how he talks, sharing their passions for Alice in Wonderland or theatre. I know they would be chatterboxes with eachother and Gooseberry would flirt a lot despite her father complaining and cussing at any chances. Again, when Jevris talks about his feelings to Jonathan or the other characters, they will all look at him dirty and have doubts about his tastes: "HER??? YOU'RE IN LOVE WITH HER??? THAT THING OVER THERE????" Same thing with Phyllis, because Jervis doesn't have a good reputation with the other inmates.
In Outlast Trials, I had more ideas, Mad Hatter would not be a criminal yet and instead work as a neurologist in Murkoff Corporation and would have taken care of Mother Gooseberry when she first came in the facility. So she wasn't the terrifying woman we know today:

Phyllis immediately love at first sight and Jervis would APPRECIATE A LOT her whole gimmick, I also point out that it was said that she was very friendly towards the staff, so Jervis was lucky to be one of them. Jervis would NOT talk about it to friends or relatives as murkoff's activities are kept secret.
The problem was after Phyllis's brain autopsy, finally the reason why she is half bald. Tetch had to repeat the neurological test, saddened by the sight of his patient being mutilated by the scientists at the facility, also noticing that she became more violent as agreed, which pained him further. He also noticed that she was gaining weight, but he didn't care, as long as she sang well and was gentle with him, looks wouldn't be his priority. Except when she came back with someone's face as a mask. Imagine the pretty damaged lady comes back like that after months you didn't see her???? LIKE WHAT HAPPENED GIRL-
In Phyllis's eyes, this neurologist was extremely interesting to her, his politeness and his accent made her tremble, but her father thought that the attraction to an Englishman would be disreputable, especially since he doesn't have Jewish origins like Futterman. But did that bother Ms. I'm-having-a-party-in-a-chapel? NO! This scientist is the jackpot for a woman thirsty for fatherly love who also has his own little quirks. I can't describe her excitement at seeing his suit and hat the first time he wore the hatter's costume. And without lying, it's a joy when he remains respectful in his compliments and confession of his affections, unlike the other prime assets who objectify her at all costs. She feels safe and respected, like a real woman after all.
