Ingredients: 1 1/4 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 1/4 teaspoon peppermint extract. 1/2 teaspoon vanilla extract. 1 large egg. 8 ounces semi-sweet chocolate, chopped. 1/2 teaspoon vegetable oil.
Instructions: In a bowl, whisk together the flour, cocoa powder, and salt. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the peppermint and vanilla extracts, followed by the egg, and mix until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough into thin rounds and place them on the prepared baking sheet. Bake for 10-12 minutes, or until the edges are firm. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the semi-sweet chocolate and vegetable oil in 30-second intervals, stirring until smooth. Dip each cookie into the melted chocolate, allowing any excess to drip off, and place them back on the parchment paper. Let the chocolate set at room temperature or in the refrigerator until firm.
