Lentil - Bulgur Mujaddara with fried Onions and Yoghurt Dip

Separately cook Lentils (with bay leaf) and then Bulgur in a fried onion, garlic, tamarind paste and chili/tomato paste broth. Fry coarse onion slices in a generous amount of olive oil until golden, add pinch of paprika and minced chilis or cayenne pepper. Fry on low heat for another minute.

Whisk yoghurt and add a dash of lemon juice and a dash of olive oil, pepper, salt, finely minced garlic and mint/parsley/oregano.

Serve lentil, bulgur mixture with a dollop of yoghurt and the fried onion on top. Garnish with chili oil and fresh herbs
