Vegan Zimtsterne (Cinnamon Star Cookies)
Cinnamon Sticks Zimsterne Cookies are delightful, star-shaped German treats that are perfect for the holiday season. Made with ground almonds and warm spices, these cookies offer a nutty and aromatic flavor with a hint of citrus.
Ingredients: 2 cups ground almonds. 1 1/4 cups powdered sugar. 2 teaspoons ground cinnamon. 1/2 teaspoon ground nutmeg. 2 large egg whites. 1 teaspoon lemon juice. 1/2 teaspoon vanilla extract. Pinch of salt. Additional powdered sugar for rolling.
Instructions: Put the powdered sugar, ground cinnamon, ground nutmeg, and ground almonds in a bowl. Whisk the egg whites in a different bowl until they get foamy. Then, add the vanilla extract, lemon juice, and a pinch of salt. Mix it with a whisk until soft peaks appear. Mix the egg whites and dry ingredients together slowly until a dough forms. Roll the dough out to about 1/4-inch thick between two pieces of parchment paper. Put the rolled-out dough in the fridge for one to two hours, or until it gets firm. Prepare the oven by heating it up to 325F 165C. Take the dough out of the fridge and peel off the top piece of parchment paper. Cover the top with sugar powder. Cut the cookies out with a star-shaped cookie cutter and put them on a baking sheet that has been lined with parchment paper. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden. The cookies should cool for a few minutes on the baking sheet before being moved to a wire rack to cool all the way. After the cookies have cooled, sprinkle them with more powdered sugar before serving.

Cinnamon stars are not easy to make. If apply the royal icing before cutting you get a lovely thick layer but you have lots of leftover(which can be reused of course by adding more almond flour and start the process again ( 👉swipe ). More convenient would be to cut first and apply the icing afterwards but the layer won’t be so thick and nice(proof me wrong). But the biggest challenge is the right oven temperature: the egg white should be sterilised, the cookie not dry hard and the the colour white not yellow or even brown. No foolproof method but testing the own oven. Either ~200 C for ~5 min or 120C for~20 min. Success! Chewy almond cookie base, crisp meringue topping. Trusted my instinct on everything I know about making meringue. Most recipes for #zimsterne call for icing sugar, but since I didn’t have luck with that last year, I swapped in caster sugar, which is a superfine granulated sugar. Also, no need for a rest overnight. I let these hangout on the counter for three hours before baking but that’s only because I had to get to an appointment. Instead of 350F (180C) as the recipe directed, which I just knew couldn’t be a good idea last year, I went with a low 200F (95C) bake for 70 minutes. Low and slow is the key to crisp, properly dried meringues without them browning.

When you see the first twinkle of stars in the night sky, the Yom Kippur fast is over.
You take your fist sips of that long awaited coffee, and with it .... Zimsterne.
German star cookies. To remind you that we celebrate a new year, new beginnings, being with loved ones. Sweet. Lovely. Gluten-free too.
Zimsterne
3 large egg whites
1-1/4 cups sugar
1/2 teaspoon salt
one pound finely chopped almonds or hazelnuts, approximately
2 teaspoons ground cinnamon
2 teaspoons grated fresh lemon peel
confectioners sugar**
Line a cookie sheet with parchment paper. Preheat the oven to 275 degrees.
Beat the egg whites until they stand in soft peaks. Continue to beat the whites, gradually increasing the speed and gradually adding all the sugar and salt, for 6-8 minutes or until they whites stand in glossy, stiff peaks. Remove about 3/4 to one cup of this mixture to a small bowl and set it aside.**
In another bowl, combine the nuts, cinnamon and lemon peel. Fold the nut mixture into the egg white mixture in the bowl until it is uniform in color. Spoon the mixture onto parchment paper and flatten the "dough" sightly. Let stand for about 15 minutes. Place another piece of parchment paper on top. Roll the dough about 1/2-inch thick. Remove the top piece of parchment paper. One at a time, cut out star shapes from the dough (the dough is sticky and difficult to work with). Place each star on the parchment paper on the cookie sheet.
When all the stars are cut, use the reserved sugar mixture and spread on top of each star. Let rest for 60 minutes.
Bake for about 25-30 minutes.
Makes about 42
**you can skip this meringue coat and bake the cookies uncoated (in this case, do not set aside the 3/4 cup meringue. You might need about 1/2 cup more ground nuts to make the dough less sticky). When they are baked and cooled, mix about 1/2 cup confectioners sugar with enough water to make a paste and use a small spoon to cover the cookies with the sugar paste. Let dry and serve.
