A simple and flavorful BBQ recipe featuring grilled zucchini slices coated in Parmesan cheese, garlic, and olive oil. Perfect as a side dish for your summer barbecues.
Ingredients: 4 medium zucchinis, sliced. 2 tablespoons olive oil. 1/2 cup grated Parmesan cheese. 1 teaspoon garlic powder. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Warm up the grill over medium-high heat. Spread the zucchini slices out in a large bowl and coat them well with olive oil. Add the garlic powder, salt, and pepper to the zucchini slices, and then toss them again to make sure the seasonings are spread out evenly. Put the zucchini slices on a grill that has already been heated up. Cook for three to four minutes on each side, or until they are soft and have grill marks. Sprinkle Parmesan cheese over the zucchini slices in the last minute of grilling. This will let the cheese melt and get a little crisp.
