For breakfast I made these amazing hash browns! No oil! Just thaw them out, add paprika, garlic powder, and sea salt them shape into balls! Place on a sheet lined with parchment paper at 425 for 10 mins then flip! Repeat!

Tried a local ice cream shoppe today! Yummi Bunni. They had one vegan option, & more to come! I had the Oreo soy ice cream & it was decent! Nothing extraordinary, but I am excited to try the other vegan flavors to come.
Dinner! Carbed and starched up! 👏🏽☺️🤘🏽💕 rice, potatoes, carrots, broccoli, kidney beans, red onion, goddess dressing, sriracha!
First weigh in since I weighed 165 before I went vegan. I will continue to weigh myself each day & post an update every month to hold myself accountable. I am almost 5'6 so I am a healthy BMI but the extra weight on my body is noticeable & uncomfortable!
Whole, Plant Based Foods Grocery List
Many of us believe that eating a plant based diet is expensive, but I am here to help you out! I am a full time college student who also works full time to pay bills so you could say I have a very tight budget. Adopting a plant based diet has actually helped me SAVE money at the grocery store.
*Here are a few things to keep in mind:
If you eat a lot of rice each week, consider buying it in 50lbs bag in bulk! This will save you a lot of money and trips to the store (you will no longer be buying those small bags. I buy my rice in bulk from my local Asian grocery stores. If you do not have a local Asian market, Costco and Sam’s have plenty of rice options.
Although it would be ideal to eat only organic, we all know that is not always possible when you are on a tight budget! Buy organic when you can and don’t stress yourself about it. Just do the best that you can in any given situation!
I buy marked down organic, over rip bananas and freeze them in huge batches for smoothies and nice cream!
I often buy canned and frozen fruits and vegetables because it is often cheaper and it is easier to keep around to throw into dishes really quick!
Here is what a biweekly grocery list for me looks like:
Produce-
Kale
Red Lettuce
Romaine Lettuce
Red onions
Tomato
Carrots
5lb bag of potato
Mushrooms
Frozen-
Broccoli
Shredded potato for hash browns
Canned-
Diced tomato
Pinto, kidney, and black beans
Sweet Corn
Pasta Sauce
Packaged-
Whole Wheat pasta
Goddess Dressing (Kroger Brand is my all time favorite)
Sky Valley Sriracha
Beverage-
I refill the same glass water jugs for .35 cents each refill
Almond Milk
Dark Chocolate Almond Milk by Silk
*On occasion I will buy vegan treats like ice cream, new spices to try out, and snack food. Since I am on a tight budget and I am aiming to lose weight, I limit these purchases and stick to WHOLE, PLANT BASED FOODS.
Optional- I take a multivitamin from Amazon by the name Deva! It cost about $19 for 2 bottles of 90 vitamins so that is about .10 cents per tab.
