Homemade Kimchi pt. 2🌶🥬🌶
Time to assemble the kimchi!
A couple things to note:
Highly recommend wearing gloves as the hot pepper powder gets all over your hands and it can really sting (especially if you have any open cuts)
Keep your jars and rims clean
Keep your jars on a plate or in a casserole dish; as the kimchi ferments, the pressure from the gases can cause the brine to siphon out of the jars. Which is why if you dont have fermentation lids for your jars, you need to take the lids off at least once a day and "burp" the kimchi. Use a spoon or gloved hand to press the kimchi down into the jar, releasing the bubbles and gas so it doesn't build up too much pressure to where your jars EXPLODE.
So I say one more time....
REMEMBER TO BURP YOUR KIMCHI AT LEAST ONCE A DAY!!

Homemade Kimchi pt. 1 🌶🥬🌶
I've been making kimchi for about a year now and its been a very interesting process learning about the art of fermentation.
By no means do I have it mastered, nor would I compare what I've made to that of a traditional Korean kimchi. But what I do know is that I've been able to adapt and work with what is available to me to create a really delicious result. With this particular recipe, i use Green cabbage (or Summer cabbage) instead of the normal Napa Cabbage (Winter cabbage).
And it doesn't have to be just cabbage! You can make apple kimchi, cucumber kimchi, the possibilities are endless. Just keep in mind that things with a higher sugar content can change the fermentation process.
This is perfect for soups, as a side to Dim Sum or (if you are like me) straight out of the jar 🤣
