Traditionally, whisky flavors are categorized into sweet, fruity, floral, spicy, and smoky. Sweet notes include vanilla, caramel, and honey. Fruity tones can range from citrus and berries to tropical nuances. Floral notes vary from subtle to intense, while spicy flavors may evoke pepper, cinnamon, or clove. Smoky characteristics, often linked to peat, can span from soft and airy to bold and intense.
With our Sundown Alchemy of Ash technique, we’ve reimagined the smoky and peaty profiles — without using peat — by incorporating Sri Lankan ingredients to craft a rich, smoky complexity. We balance this with floral elegance and a hint of spice, reminiscent of the character found in fine bourbon whiskies.
History
The Alchemy of Ash whisky enhancement process originated as an experimental project at Sundown Rooftop in Negombo, Sri Lanka, well before 2024. Driven by a desire to elevate the flavor quality of widely available local whiskies, the team at Sundown began testing traditional and modern infusion techniques to enhance taste, smoothness, and overall character.
Initial trials focused on small-batch treatments using spice blends, activated charcoal, and filtration methods. The goal was to reduce harshness commonly associated with entry-level whiskies and introduce smoky, complex notes reminiscent of premium international brands.
As the process evolved through iterative experimentation, it became clear that the flavor transformation was both consistent and remarkable. By 2024, the process had matured into a repeatable method and was officially introduced to the public under the name "Alchemy of Ash."
The project was notably shaped by the creative leadership of Shane Premadasa, a mixology expert at Sundown, whose contributions helped standardize the infusion and filtration techniques. Though still practiced in-house at Sundown Rooftop, the Alchemy of Ash has gained attention among local bartenders and whisky enthusiasts for its innovative approach to enhancing affordable spirits,
