5 Cookie Pro Tips from TED-Ed (and Science)
1. Cookies are for everyone. But everyone has cookie preferences. When you slide that cookie tray into the oven, youâre setting off a series of chemical reactions that transform one substance - dough - into another - cookies! The better you understand âCookie Chemistryâ, the better equipped you will be to create the cookies you crave.
2. Lots goes on in that oven, but one of scienceâs tastiest reactions occurs at 310Âș. Maillard reactions result when proteins and sugars breakdown and rearrange themselves into ring like structures which reflect light in a way that gives foods their distinctive, rich brown color. As this reaction occurs, it produces a range of flavor and aroma compounds, which also react with each other forming even more complex tastes and smells.
3. The final reaction to take place inside your cookie is caramelization and it occurs at 356Âș. Caramelization is what happens when sugar molecules breakdown under high heat, forming the sweet, nutty and slightly bitter flavor compounds that defineâŠcaramel! So if your recipe calls for a 350Âș oven - caramelization will never happen.Â
So, if your ideal cookie is barely browned - 310Âș will do. But if you want a tanned, caramelized cookie, crank up the heat! Caramelization continues up to 390Âș degrees.
4. No need to check that oven like a fiend. You donât even really need a kitchen timer - when you smell the nutty, toasty aromas of the Maillard reaction and caramelization, your cookies are ready!Â
5. Baking is chemistry, friends! Thatâs right - PURE. SCIENCE. Check carefully before altering those recipes - chances are some of those ingredients and quantities are there for a reason.

New Yearâs Resolutions
A New Yearâs Resolution that is to make you a âbetterâ person in some arbitrary amount of time is unreasonable.Â
For some itâs not a bad idea. Iâm sure for some people itâs the best idea they could have, but the idea of becoming a âbetterâ person is all a matter of perspective and I feel that that is lost.Â
Following this logic: if youâre successful at becoming a better person it could mean people like you more and you base how great you are of a person on how people like you. So, you try to maintain your status among these people or keep the quantity of these people (having the fear of even losing one).
Only problem in that lies the lack of perspective.Â
People will like things about you and people will hate things about you. Thatâs a good thing. It means youâre being a person. Doing everything you can to make people happy with your existence is much less becoming of a person and of more a salve to approval. Weâve evolved to be better than that.Â
Put simply, if youâre going around fishing for other people's approval youâll find that it is as effective as putting out one fire in the garden of your social life without acknowledging the inevitability of another fire somewhere else soon.
There arenât a lot of people out there who think about you as much as you think about yourself. And so, theyâre not continuously thinking âhow can this person make me happyâ--however, there are a few people whoâd be so entitled to think so.
If you have any resolution this year let it be that you will be more aware of your flaws and weaknesses in your social life. You canât change the way people think about you (people probably donât think that much about you in the first place), but you can only give them a more well informed opinion and whatever they decide to do with that information (even if they forget entirely) is up to them.Â
Accepting that 100% of the people you encounter wonât like you or something about you is critical to developing and grooming your social skills and making decisions as to who is in and who is out of your social life is your responsibility.Â
Having awareness is a better key to unlocking a better door to a better resolution in reference to conquering your flaws in the idea of becoming a better person.
Be advised, some of this conquering could be completely internal. That could mean the absence of your unneeded input or the absence of you entirely to avoid a foreseeable situation.
In my book, if you contribute to society youâre a good person. And at that point you can only become better if you produce or advocate with the intentions to build agency or productivity for society.Â
