Nonna's Rose Schuman Cookies
(Cinnamon Sugar Cookies) 1 cup sugar 1 cup veg oil 6 eggs 3 tsp baking powder 5 cups flour (or enough to make a soft dough which you need to be able to roll by hand) 1T cinnamon 1/4 sugar Preheat oven to 375°F. Mix flour and baking powder. Set aside. Also, in separate small bowl, mix cinnamon and sugar and set aside. Mix together sugar and veg oil. Blend well. Add eggs. Slowly add flour mixture. This should make a soft dough. It has to be easy enough to roll (like the shape of thin breadstick grissini). Wrap dough and let rest for about 20 minutes, covered. Roll pieces of dough gently to about 6 inches, or make one long rope cut down into 5-6" pieces. Form each pc into a wreath or a Double twisted stick. Dip each cookie in cinnamon-sugar mixture. Place on a parchment-lined cookie sheet. Bake for about 18 minutes or until golden. Turn pan in oven after about 9 minutes. Move cookies to cooling rack.
