Moomintroll’s Chocolate Muffins

Ingredients:
3 eggs
2 ½ dl sugar
1 tsp vanilla powder
50 g butter
100 g dark chocolate (~70 % cocoa)
1 dl sour cream
2 tbsp cold coffee (liquid)
3 ½ dl wheat flour
2 tsp baking soda
4 tbsp cocoa powder
a pinch of salt
Icing:
120 g soft butter (leave it out to warm up a little)
1 l icing sugar
2 tsp vanilla powder
1 dl cocoa powder
200 g unflavored cream cheese
1 tbsp hot coffee (liquid)
How to make:
Whisk the eggs and sugar into a foam. Melt the butter and mix it with the sour cream and coffee and add the mix into the foam. Mix the dry ingredients together and add them to the other mix carefully. Add the melted chocolate to the dough. Fill ⅔ of your pan with the dough and bake in a 175C (347F) oven for c. 20-25 minutes.
How to make the icing:
Mix all of the ingredients except the hot coffee into an even mix. Lastly, add the hot coffee into the mix. Spread or squeeze over the chilled muffins.
