Husband is home at last. It's always hard when he's gone. I signed up for a partnership and when he's not here it feels like single parenthood. I know he leaves to provide for us but when he's gone there's no back up. I am the only adult in the house and the only one who will reliably feed all of the animals and Tiny Fae. The only one who will clean up the mess from the worlds most untrainable dog. I am not a big fan of dogs to begin with and this one will not stop going to the bathroom in my house. Its hard to pull 18 hour days. I get up at 5:30am and I don't stop moving and working in some fashion until 8 or 9 when i collapse exhausted into bed. I posted the picture above to remind myself and anyone reading that even if things are hard you can power through. It may not get easier anytime time soon but you can do it. Today after work i took a much needed nap. It was 6pm but I was ready for bed. Husband graciously let me sleep even though he was tired too. He took the tiny fae and kept her entertained so that I could rest. Husband works hard for us and I am grateful to have him everyday. Tomorrow I will probably get up with Tiny Fae so that he can get the rest he let me have. Tomorrow I will rest too because Sunday i will clean the house again and then it's back to work.
Little Fae is off to church this evening.... This witchy mom with religious trauma doesn't know how to feel. I won't keep her from exploring whatever faith practice she feels called to but I also fear that she will lose her muchness to the god with the big G.
I fear that if she tells the congregation that her mom is a witch they'll get out the verbal pitchforks and emotional torches. I have never been in the broom closet and I've done my best to educate her on my practice.
I fear that her days of listening to the trees and speaking to the wind will be over. This is the same child that speaks to bugs like friends and won't step in the long grass because someone lives there.
I can do nothing but support her choice in yet, I wonder if it is the right choice.
So husband is gone until Thursday night. His job requires some travel so occasionally I find myself wrangling the young fae and all the animals. (Three puppies, 4 dogs, fifteen chickens and one cat) today I was lucky enough to be off work for labor day. After the fae and I went to the beach we came home and i did chores. This post, albeit a bit of a ramble, is to explain how I cook dinner after working 8 hours a day.
I was lucky enough to be gifted an instant pot a couple of years ago. I love it. It makes hours long recipes possible in just a few minutes. Tonight I made bbq meatballs in under 30 minutes. The sauce is a Carolina mustard sauce and I used chicken flavored crackers to help bind the meatballs together as well as bring some more flavor to the meatballs. I also made some frozen fries and carrots to go with it because those are easy. The recipe is below.
1lb of ground beef.
1 bottle of your favorite bbq sauce
A half cup of chicken cracker crumbs
One egg.
First mix together your meat, crackers and egg. Season to taste.
Then turn your instant pot to saute or heat a skillet on medium high. When the pot is hot place your meatballs in an even layer and sear on all sides. Remove from pan.
Clean the pan out and place back on the heat. Pour a layer of bbq sauce across the pan. Arrange meatballs in an even layer and cover with the rest of the sauce. Cook on medium heat covered for 10 minutes.
