• Dill Pickle Soup | Eastern Europe
During my first week living in Russia, my roommates and I were presented with a big bowl of dill pickle soup. I remember my dear friend looking at me, mouthing “Pickles? In soup?” I was also confused. “Is that a thing? Do people put pickles in soup?” And then I tasted it- “OH MY GOD WHY HAVE I NEVER PUT PICKLES IN SOUP BEFORE??? WHY DOESN’T THE REST OF THE WORLD KNOW ABOUT THIS?!” Needless to say, it became a favourite of mine. I recreated the recipe and made a huge batch for this chilly autumn evening.
Ingredients:
2 yellow flesh potatoes, chopped into 1 inch cubes
2 carrots, chopped
½ of a white or yellow onion, diced
2 cups of sliced cabbage
6 cloves of garlic, minced (I am addicted to garlic so I tend to use more than the average person might, use your discretion!)
2 teaspoons dried dillweed (if you have fresh that’s even better!)
5 cups vegetable broth
½ cup dill pickle juice
2-3 dill pickles, chopped (or 4-6 mini dills)
1 tablespoon sea salt
Cracked black pepper, to taste
1. Saute onions in a tablespoon of oil in a large soup pot for a few minutes. Add garlic. Once the onions start to become translucent, add the potatoes and carrots. Stir in one teaspoon of the dried dill.
2. Cook, stirring frequently for about 8 minutes, until the potato and carrot begin to soften.
3. Add vegetable broth and pickle juice. Stir in cabbage and bring to a boil. Let simmer for about 20-25 minutes, until the potatoes and carrots are cooked through.
4. Blend half of the mixture, and return to pot.
5. Stir in chopped dill pickles. Add remaining dill and season with salt and pepper. Serve!
