Today, I made cupcakes—chocolate cupcakes with cream cheese frosting.
This is monumental because I have never made cupcakes before, much more frosted them—with cream cheese icing! This recipe is something I found online and has piqued my interest because it makes use of mayonnaise instead of eggs. I halved the measurements because what I have is a small tabletop oven that can only fit a 6 cup silicone 2 oz. muffin pan (that looks just like this, but in pink) I got from the Japan Store.
The cream cheese frosting recipe is also something I found on the web. Took less than ten minutes to make it, and it is yummy. My husband, who was never a fan of cheese, liked it! :)
However. My cupcakes had not-so-lovely craters on the surface, and it was because I did not have a sifter for the dry ingredients. I also did not have a wire whisk, so I had to make do with a fork to dry whisk. So those are the things I need, plus maybe a larger oven so I could make more in less time.
I pray this becomes the start of something wonderful—a new hobby! :)
