Hot Mango Halwa Recipe to Keep You Warm, on Cold Winter Days
A piping hot cup of coffee or tea with a hot bowl of halwa is a godsend during cold and foggy winters. These are the ultimate comfort food combos and loved by all. Among the inventive takes on this Indian sweet dish is the mango halwa. What makes it even better is that this sweet delight can be enjoyed even in this weather thanks to frozen mango pulp that is available all year, as against the fresh fruit which is only available in summers. Mango is a much loved fruit of our country and used in a variety of ways in our cooking. Many mango recipes hold a place of pride in many Indian kitchens. Mango halwa is one such jewel. An easy mango recipe, it is a favourite among all age groups. Made using mango pulp with suji/rava, this is our halwa with a twist! It is sweet, smooth, silky and tastes divine. Alphonso and Kesar mango pulp work best in this dish. Here’s the mango halwa recipe.
1 cup pureed Mango or Mango Pulp.
A handful of nuts – Almonds, Cashews, Raisins (optional)
•    Put ghee in a pan, add 1cup suji and roast on low-medium flame
•    Heat 2 cups of water to boil separately
•    Add 4-5 ground green cardamom and around 10-15 raisins and sliced almonds to the suji mix
•    Stir on low flame till a delicious aroma fills the kitchen, and the mixture is golden brown
•    Add ½ cup sugar to the boiling water
•    Now add sugar syrup to the suji mix, keeping the flame on low, while stirring continuously
•    Add mango pulp once the water gets absorbed by suji. Mix well
•    Add a pinch of saffron, cover the pan and let cook on low flame for 2-3 minutes
•    Serve hot with a piping hot cuppa!
