Homemade Vegan Cheese Platter

Fermented grain water (in this case, wheat berries) aka rejuvelac is blended with raw cashews then fermented again to make a base for many types of vegan cheese. These cheeses have a depth of flavour only fermentation can accomplish. The cheese board from top left: Boursin, Gouda, cheddar, sharp cheddar, cream cheese, Brie. All vegan. All delightful.
