Look at my lovely little zucchini boats! So quick and easy. Ingredients: 1 cup soaked and cooked pinto beans 2 zucchinis 1 tbs soy sauce 1 medium carrot 2 tbs dry roasted sunflower seeds 1 celery stick Method: 1) Blend pinto beans with chopped carrot, soy sauce, sunflower seeds and celery. It would be wise to keep some of the cooking water from the beans to allow the mixture to blend easily. Blend until it reaches the consistency you desire. 2) Hollow out zucchinis with a spoon. You can use this later in soups, salads etc 3) Spoon in bean mixture into your "boat" 4) Bake for about 20 minutes or until zucchinis are soft. This goes deliciously with some brown rice! Tip: it's great to dry roast sunflower seeds in big batches and serve them in an airtight jar. Great to serve in salads, baked in cookies, to add some texture to hummus, or just as a snack.
