🍑🥛 Peaches and Cream Cake.
Ingredients - Yellow cake mix. - Eggs - Vegetable oil - Vanilla extract - Vanilla pudding. - Buttermilk - Pineapple juice. - Cinnamon sugar. - Peaches (and lots of ‘em).
Directions 1. Prepare the yellow cake mix as directed on the box, but substitute water that the box calls for with equal parts buttermilk and pineapple juice. So if it calls for 1 cup of water, use ½ cup of buttermilk and ½ cup of pineapple juice. The buttermilk will give the cake a thicker and moister consistency and the pineapple juice will add a fruity depth to it. Put one package of unprepared vanilla pudding mix into the batter. It adds thickness to the cake, and will boost the ‘cream’ flavor of the peaches n cream cake. 2. Add a few shakes of cinnamon or cinnamon sugar into the batter. Add a few more, why not? The cinnamon will cut the sweetness by just a smidge. Now drop in half a teaspoon of vanilla extract. 3. Dice up peaches. Dice up more peaches. Now drop those in. ALTERNATIVELY: if you’re in a pinch or want to save time, use peach cups. You know, those little fruit cups in plastic containers that kids take to school? They are perfectly diced peaches already prepared for you; I recommend the ones in water or in juice, as opposed to a candy-like concentrate. Rinse them off, and dump them in. 4. Mix it all these good things together and pour into your pan. Now, place however many peach slices you want across the top (I place mine in a ring pattern in the middle of a circular cake tin). They’ll sink in during baking. Tap a layer of cinnamon sugar across the top so that it’ll have a lovely brown color, and then place in the oven for the temperature and time prescribed on the box. 5. Remove and permit to cool. The cake is ready when you can plunge a fork into the cake and the tines come out clean.
Decorate with peaches, strawberries, whipped cream, however you so choose, and enjoy!
