This wonderful fresh and large sea bream formed the basis of an excellent Boxing Day Dinner cooked by Anthony J Sargeant.

Lobster being prepared for Christmas Eve Dinner
Anthony Sargeant has started to prepare the lobster by separating the claws and legs then splitting the lobster into two halves taken care to reserve any juices from the cooking (this can be incorporated into the sauce/juice used to dress the Lobster).

Anthony J Sargeant was born and grew up in South London. The 179 Bus Route then ran from Grove Park through Downham and Bellingham to Catford then Brockley to Blackfriars Bridge on the Thames in Central London.

Anthony J Sargeant learnt to drive in an early 1950s Ford Zephyr like this one - even the same dull green colour. It was my father’s car and by modern standards a pig to drive. Light at the back, three forward gears, a bench front seat, and of course not seat belts in 1962.
