This Simple Sesame Noodles Stirfry is a quick and delicious meal that combines tender noodles with a flavorful sesame sauce and a variety of colorful vegetables. It's perfect for a weeknight dinner or a satisfying lunch.
Ingredients: 8 oz 225g noodles such as udon or soba. 2 tablespoons sesame oil. 2 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon honey. 1 tablespoon toasted sesame seeds. 1/2 cup sliced scallions. 1/2 cup sliced red bell pepper. 1/2 cup sliced carrots. 1/2 cup broccoli florets. 1/2 cup snap peas. 1/2 cup sliced mushrooms. 1 tablespoon vegetable oil. Salt and pepper to taste.
Instructions: Noodles should be cooked as directed on the package until they are al dente. After draining, set aside. To make the sauce, combine the rice vinegar, honey, toasted sesame seeds, and soy sauce in a small bowl. Put aside. In a large skillet or wok, heat the vegetable oil over medium-high heat. When the garlic is fragrant, add the minced garlic and saut it for about 30 seconds. Add the red bell pepper, carrots, broccoli, snap peas, mushrooms, and sliced scallions to the skillet. Stir-fry the vegetables for 34 minutes, or until they are crisp-tender. Pour the sauce over the cooked noodles after adding them to the skillet. In order to coat the noodles and vegetables evenly, toss everything together. For complete heating, cook for a further two to three minutes. Pour in the sesame oil and give the stir-fry another toss to mix it in. To taste, add salt and pepper for seasoning. If desired, top with additional sesame seeds and scallions and serve hot.
