Ingredients: 200g firm tofu, drained and pressed. 2 tablespoons peanut butter. 1 tablespoon soy sauce. 1 teaspoon chili sauce adjust to taste. 1/2 cup breadcrumbs. 1/4 cup finely chopped red bell pepper. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 egg or substitute for a vegan version. Salt and pepper to taste. 4 whole wheat burger buns. Lettuce leaves, tomato slices, and any desired toppings. Olive oil for cooking.
Instructions: In a mixing bowl, crumble the tofu into small pieces. Add peanut butter, soy sauce, chili sauce, breadcrumbs, red bell pepper, red onion, minced garlic, and egg or substitute. Mix until well combined. Season the mixture with salt and pepper to taste. Divide the mixture into 4 equal portions and shape them into burger patties. Heat a skillet or grill pan over medium heat and lightly grease it with olive oil. Cook the tofu patties for about 4-5 minutes on each side, or until they are golden brown and heated through. Toast the burger buns in the skillet for a minute or until they are lightly browned. Assemble the burgers by placing lettuce leaves, tofu patties, tomato slices, and any desired toppings on the bottom bun. Top with the other half of the bun.
