Indulge in the creamy richness of homemade vanilla gelato with luxurious caramel swirls and decadent chocolate shavings. This elegant dessert is sure to impress guests or satisfy any sweet tooth craving.
Ingredients: 2 cups whole milk. 1 cup heavy cream. 3/4 cup granulated sugar. Pinch of salt. 1 vanilla bean, split and scraped. 3 large egg yolks. 1/2 cup caramel sauce. 1/4 cup chocolate shavings.
Instructions: Add half of the sugar, salt, vanilla bean and its seeds to a saucepan. Then add the milk and cream. Put the mixture on medium heat and heat it until it just starts to steam. Then take it off the heat. To make the egg yolks pale and thick, mix the rest of the sugar with them in a different bowl. Whisk the hot milk mixture into the egg yolks little by little. Put the mixture back in the saucepan. Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it gets thicker. Do not let it get too hot. Take the mix off the heat and pour it into a clean bowl through a fine-mesh sieve. Cover and put in the fridge until very cold, preferably overnight. After the mixture has been chilled, use an ice cream maker according to the directions that came with it. Add the caramel sauce in small amounts to make swirls during the last few minutes of churning. Moving the churned gelato to a container that can go in the freezer and adding chocolate shavings as you go. It will take about 4 hours or overnight to freeze until it is firm. Put scoops of gelato on plates and top them with extra caramel sauce and chocolate shavings.
