Types of Sauces In Korean Cooking
1. Doenjangย
Doenjang is fermented soybean paste that is made of soybeans and salt. It is somehow similar with the Japanese miso but doenjang rougher compared to them. This sauce is often used in soups and stews.ย
2. Gochujangย
Gochujang is a kind of chill paste that is thick and little sticky. It is one of the most necessary sauces in Korean cooking. This sauce is primarily made with chillies, soybeans, and glutinous rice. Although the redness of the sauce may make it seem spicy but it actually has a twist of sweetness in it.ย
3. Ssamjangย
This sauce is a mixture of doenjang and gochujang seasoned with garlic, ginger, sesame oil along with other spices. This sauce is usually eaten together with ssam which is the Korean lettuce wrap where you wrap meat with other sides in lettuce.ย
4. Ganjangย
Ganjang is light soy sauce that is similar to the Chinese soy sauce. It has a milder flavor but is darker and sweeter. It is used as a dipping sauce more often. There is another soy sauce called gukganjang that is used for cooking as itโs more flavorful because it has brine.ย
5. Chunjangย
This is the sauce used to make the Korean favorite jjajangmyeon. Chujang is the black bean sauce made from fermented soybean which has a slight bitter and salty taste. However, some chefs like to add sugar in it to balance out the taste.ย
6. Saewoojeotย
Saewoojeot is salted fermented shrimp, often used to add saltiness to dish. It is made from very tiny shrimps anyone ever seen. Saewoojeot is used in mostly in Kimchi to let the Kimchi ferment. It is not the same as fish paste used in Asian cooking.ย
7. Myeolchiaekjeotย
This is anchovy sauce made from fermented anchovies, it is somehow the Korean version of fish sauce. This sauce can be used to season soup or stews if you happen to run out of gukganjang. Myeolchiaekjeot is another sauce that canโt be left out while making Kimchi.ย
