India Monsooned Malabar
This is a super smooth medium-dark roast, with nutty chocolate undertones. It’s also very low on the acidity scale due to the process the beans go through. The beans are exposed to monsoon winds and rain for 3-6 months. During this process, the beans swell and lose most of their acidity, resulting in a smooth flavor profile almost entirely free of the bitterness that some darker roasts can have. Tom’s been tinkering with the roast time on these for the past couple of months, and has really hit the sweet spot with this one. It’s one of my favorite roasts he’s ever done. Perfect for French Press and pour over/Chemex (I’ve tried both and can vouch for it), as well as your standard coffee machine.
