Lunch! When you want to go out for french fries, but figure you should make lunch for a couple of days instead. 😂😂 Being intentional about what I eat is def a goal these days. Quick lunch (just the way I like it) -- chickpeas, fire-roasted tomatoes, garlic, coconut milk, cumin, salt & pepper...with brown rice & cilantro. This meal took under 30 mins and I made extra, so that I don't have to think about lunch tomorrow. Being vegan is all about planning ahead, so that you don't go back to meat, eggs & dairy. Over here trying to snack right while I get some work done. 👊🏾 We only have about 2 weeks left in the year and I'm wrapping up a vegan project that has been on my mind for over 6 mos. My struggle with resistance, procrastination (watching Hulu & YouTube lol) and overthinking this vegan course has been real! *sigh* It will get done! Has anyone tried these cookies yet? I saw them at a local smoothie spot and had to get them since they're vegan (cause that's how I do😂). The macadamia nut one was just okay and the chocolate chip one was dry as hell and crumbled. 🙈🙈 What did you think?
Another smoothie & cashews kind of morning. I have this on days when I don't feel hungry but know I need to eat something. The smoothie is lots of spinach, banana, frozen mango, medjool dates & water. What's your fave breakfast?
I just ordered Follow Your Heart's new vegan egg (from Amazon). It scrambles, bakes & binds. I've never been a fan of scrambled eggs, but I want to see how it works in cornbread & cupcakes. Are you planning to try it? What are you eating for dinner? We're having a 30-min meal over here....vegan Alfredo pasta. I forgot to add the mushrooms but the broccoli & fresh parsley was enough.
