mine own carbonara recipe for my big sis joouheika:
2 tablespoons olive oil lots of garlic butter (I probably use more than is necessary so do it to taste) 6 rashers of bacon 75g parmesan 3 eggs 400-450g pasta (depending on how hungry you are)
all of these measurements are guesses tbh so if you want more cheese add more cheese. be careful with adding more egg though bc it's easy to add too much
before you start, chop your bacon into thin-ish (1cm?) strips and grate the parmesan. idk how long your pasta will take to cook/when to start cooking it but I usually start it after the bacon
SO first off you get however many garlic cloves are reasonable (cooking for 1 I use about 4 bc you can never have too much), peel them and bash them with the flat side of a knife so they're slightly crushed. toss them in a frying pan with hot olive oil. once the garlic's golden brown on both sides whip it out and throw it away (or eat it I won't judge you), add a bit of butter and throw in the bacon. cook it until it's slightly crisp and turn off the heat. get a warmed bowl and mix/whisk the parmesan with the eggs in it until the mixture's nice and smooth, then add pepper (and salt if you want but with the bacon, cheese and salt in the pasta water I find salt at this stage is too much). just before the pasta is completely cooked, reheat the bacon. once the pasta's cooked, drain it and chuck it in the bowl with the egg/cheese mixture as soon as possible, add the bacon and mix it around so the egg cooks a little. then eat it and cry bc it's delicious
